Our Whiskey
Crafting spirits at Adrift Distillers is a balance of patience, precision, and creativity. We distill in small batches, giving us the freedom to refine every step—from fermentation to distillation to barrel aging. Our whiskeys rest slowly in carefully chosen casks, drawing out layers of flavor that deepen over time. Each release is a reflection of our hands-on approach and our dedication to letting the natural character of our ingredients shine through.
Washington’s most iconic grain. We use wheat from both the rolling hills of the Columbia Basin as well as grain from the rich, rain soaked soils of the Skagit Valley bringing together the best that our state has to offer. A mellow whiskey, highlighting the caramel and vanilla notes imparted by our new oak barrels used for every batch.
A grain traditionally used as a cover crop or cheap feed grain, we’ve taken triticale and given it a new purpose. This wheat-rye hybrid from the Columbia Basin produces a phenomenally complex spirit when distilled and aged here on the coast.
Our contribution to America’s signature spirit, our bourbon has evolved over the years, culminating in a mash bill that brings in grain from all across the state, producing a sweet and smooth but complex spirit with a warming finish.
A favorite collaboration with North Jetty Brewing, we turn their easy drinking porter into a whiskey as we ferment, distill and age their expertly crafted beer. Not a single malt, this more complex expression shares a rich, roasted malt finish you’ll find in the beer that inspired it.
